Meatless Meals

David and I have decided that we are going to try and eat at least one vegetarian meal a week and buy the majority of our meal form local, natural sources. I have never really been much for vegetarian fare, but I really enjoyed the two meals that we have had this last week.

I have found the recipe for the entree online, making some simple modifications. I thought of the sides on my own, but they were not difficult concepts at all. One thing I did learn was that the recipes call for measurement of quinoa in its uncooked state...maybe I should read a little more clearly.

If anyone has suggestions for vegetarian meals, I am open to more ideas!

I wrote this post at the beginning of the week but did not have the pictures with me. Last night we used the leftover burger to make soft tacos...delicious!
